What is a sprite? I keep seeing that word on mk forums, but have no idea what they are.

Sprites are what the mk team used to make there old arcade games and console ones. They made a certian limit of sprites for each character which showed the way the character's stance to when it was attacking and such.

Sprites are the single framed images used to make animations in video games. Just one sprite is like a photograph stuck in time. But if you keep on adding a sprite that changes just a little bit, putting them together in the end result will achieve fluid movement, as if it were alive.
Here's an example of what sprite animation can look like:
