According to Ed Boon's twitter the final release has a lot more coding which should fix up a lot of the odd bugs or quirks from the demo.

You always find a way to crack me up, Amphibious.  On a different note, I can't wait for this game to come out! I'm gonna be going to my local game store at midnight, celebrating the midnight release of an epic! Lucky for me, I paid for it all in advance so all I gotta do is show my receipt to them! I, like many on the 19th, will be on my PS3 after I get it. Who's with me? I say we send a message on the XBOX Live and PS Networks with all of us playing MK 9.
