just use projectile attacks against him (kung lao's hat or liu kangs fireballs or throw kintaro's head at him) and when he starts to swing his hammer around in circles around the arena, wait till he gets near you and then use your long jump to jump to the other end and just keep using long jump to dodge him till he stops spinning. when he stops, he will be winded and you can get a couple of free hits on him. good luck!

My friend and I just developed a pretty cheap tactic that works really good against Kintaro and Shao Kahn (Not so much on Tsung).
As Scorpion and/or Sub-Zero, just use Sub's ground slide and Scorpion's teleport-punch moves constantly. The bosses usually can't hit you since your characters are moving too fast and if you want to chance it throw in some other punches/kicks/fistsofruins. When your energy meter depletes run like hell until it recharches.
And there you have it, the extremely easy way to defeat Kintaro and Kahn rather than using weak projectiles. I believe the button combo to perform those moves on the X-Box is R-trigger and X, though I could be wrong.
Note: Don't do this when Kahn has his massive hammer, unless you want to see a fatality performed on your character.
