I think it was juist for fun or they didn't want people to get confused with the film Mortal Combat.

I believe this had more to do with marketing back in the Early 90s. We were still coming off the 80s (thank god those ended), And spelling things wrong on purpose was the thing to do.
It was rad and totally awesome to spell it with a K. Since the movie and the game are not the same type of media, they wouldn't have had a lawsuit.
