For all slow-moving bosses, or when it becomes necessary (ie. no other method seemed to help), we always resort to ranged combat, and it almost always works. Problem is that it takes forever, and the patience you need is incredible if you're playing Scorpion and Sub-Zero with the retarded damage from their projectiles (and the special abilities of their projectiles don't work against some bosses too, like Goro, for example).
