DVD has evolved alot since the original releases of the 2 films on DVD back in the late 90s. The quality of DVDs has risen, and the space available on discs have gone up. Also, the cost of creating DVDs has fallen.
The previous incarnation of the 2 movies on DVD, though VERY good for being early DVDs, could do for a new release.
Not only could the picture and sound be better mastered (imagine how it would sound with today's mastering technology), but the DTS track that the laser-disc made available could be used at well.
The DVDs were also EXTREMELY lacking of special features. We got no "making of" featurettes, no commentaries, no deleted/extended footage, nothing.
I think that it's about time that Mortal Kombat gets it's proper DVD treatment.

Eh, I honestly don't care. I don't buy a DVD for the special features, I buy it for the movie. _________________

I also just thought about this, but they could also use the extra footage to create an unrated/director's cut.
